Leon’s Flour Mix Log for Baking

Grind

  • 2 cups millet
  • 1 cup emmer berries
  • 1 cup quinoa
  • 1 cup buckwheat
  • 1 cup teff
  • 1 cup rice
  • 4 tbsp psyllium husk

Add after grinding

  • 1.5 cup arrow root starch
  • salt
  • 5 tsp baking powder

Mix together

  • 2-4 teaspoons of yeast
  • 2.5 cups of warm water

Rise time: two hours

December 20 2025

–> turned out good. nice rise. not very big holes from rising though

Grind

  • 4-5 tsp baking powder

early october

before grinding

  • 2 cups millet
  • 2 cupts emmer berries
  • 1 cup buckwheat
  • 1 cup sweet black rice

after grinding:

  • 1 cup arrow root starch

late september

One cup of millet, 2 cups of Emmer berries, Half a cup of buckwheat, one cup of arrow root starch

2.5 cups of water; could have used a little little bit less

Rise time, two hours and 10 minutes

–> turned out very good

sept 15 with Samudra

–> times 1.5 for mill things:

  • 1.5 cups of millet
  • 0.5 cups of quinoa
  • 1 cup of buckwheat
  • 1 cup of emmer berries

3.5 tsp of baking powder

salt

3.5 ish cups of warm water

almost no rise time (10min maybe)

oven 440F

–> didn’t turn out good because of short rise time

september day

into mill:

  • 1.5 cups of millet
  • 0.5 cups of quinoa
  • 1 cup of buckwheat
  • 1 cup of emmer berries

mixed with 2.25 cups of water, salt, and dry yeast

❤️ was pretty good but should have used less water (2.2 cups probably) pre grinding

3 cups water. maybe too much water

sept 7 25 with allison

no knead bread recipe with 2 cups of spelt unground 2.5 cups of water (was too much water ) tiny bit of quinoa risen for 3 hours

baked for an hour at 365

1 cup of sourdough starter

unground 1 cup elmer 0.5 cup spelt 0.5 buckwheat

water, salt,

risen for 1 hour

bakes at 350 F

–> very hard and bricky

white mix with high starch and white rice (inspired by vicki’s house mate)

1c whit rice, 1c oats, 0.5c millet, 0.5 c quinoa, 1c arrow, 1c tapioca, 2tbsp xanthan gum

2 1/3 c warm water. 4 cups of ground flour mix

Parental blend - October 2024 - starchy with black rice

self ground blend

2 cups, black rice, 1 cup, white rice, 3 cups rolled oats, one cup of buckwheat, one cup of chickpeas, 1.3 cups of millet, 1.3 cups of quinoa,

3 cups of tea, Abeokuta starch, 1 cup of arrowroot starch, 2 cups of potato starch

5 tablespoons of xanthan gum
