Egg Noodles with Peanut Sauce
Cold noodles with a creamy, savory peanut sauce. Goes really well with some boiled broccoli or bok choy.
Ingredients
For the Sauce (blend all together)
- 3/4 cup strong brewed green tea or water
- 1/3 cup natural peanut butter
- 1/4 cup soy sauce
- 1/4 cup rice vinegar (not seasoned)
- 3 tablespoons packed light brown sugar
- 1/4 cup roasted peanut oil
- 2 tablespoons toasted sesame seeds
- 1 teaspoon chili-garlic sauce
- 1 teaspoon toasted sesame oil
- 1 inch piece of ginger
- 1 small clove garlic
- 1/4 teaspoon salt
For the Noodles
- 12 ounces flat Chinese egg noodles
- Fresh cilantro, for topping
- Peanuts, for topping
- Sesame seeds, for topping

Blend all sauce ingredients together: (3/4 cup) green tea or water, (1/3 cup) peanut butter, (1/4 cup) soy sauce, (1/4 cup) rice vinegar, (3 tablespoons) brown sugar, (1/4 cup) peanut oil, (2 tablespoons) sesame seeds, (1 teaspoon) chili-garlic sauce, (1 teaspoon) sesame oil, (1 inch) ginger, (1 clove) garlic, and (1/4 teaspoon) salt until smooth.

Boil (12 ounces) flat Chinese egg noodles according to package instructions.

Toss noodles with peanut sauce and let sit for a few minutes to absorb flavors.

Top with cilantro, peanuts, and more sesame seeds.
Notes
