Eggs and Tomato Stir Fry

A classic Chinese home-style dish. The ideal ratio is 1 large tomato per every 2 eggs, but adjust to your liking! This 2 eggs 1 tomato serving is good for one hungry person.

Ingredients

  • 2 eggs
  • 1 large tomato
  • Salt to taste
  • 1-2 stalks green onion (scallion)
  • Oil for cooking

Instructions

  1. Beat (2) eggs and chop (1 large) tomato into medium sized chunks. Chop (1-2 stalks) scallion into small pieces.
  2. Pour a bit of oil in the pan and scramble the eggs. As soon as they’re cooked through, set them aside in a bowl.
  3. Add a bit more oil and throw in the tomatoes. Cook at medium heat for about 4 minutes, or until they begin to soften and the juices come out.
  4. Add in the scrambled eggs and mix. Add salt to taste. You can also add some water if you want that yummy tomato juice sauce.
  5. After a minute or two of stir frying, add in the scallions and cook for 30 more seconds. Turn off fire and serve with rice!

Notes

  • Scale up easily: use 4 eggs and 2 tomatoes for 2 people
