Eggs and Tomato Stir Fry
A classic Chinese home-style dish. The ideal ratio is 1 large tomato per every 2 eggs, but adjust to your liking! This 2 eggs 1 tomato serving is good for one hungry person.
Ingredients
- 2 eggs
- 1 large tomato
- Salt to taste
- 1-2 stalks green onion (scallion)
- Oil for cooking
Instructions
- Beat (2) eggs and chop (1 large) tomato into medium sized chunks. Chop (1-2 stalks) scallion into small pieces.
- Pour a bit of oil in the pan and scramble the eggs. As soon as they’re cooked through, set them aside in a bowl.
- Add a bit more oil and throw in the tomatoes. Cook at medium heat for about 4 minutes, or until they begin to soften and the juices come out.
- Add in the scrambled eggs and mix. Add salt to taste. You can also add some water if you want that yummy tomato juice sauce.
- After a minute or two of stir frying, add in the scallions and cook for 30 more seconds. Turn off fire and serve with rice!
Notes
- Scale up easily: use 4 eggs and 2 tomatoes for 2 people
