Leon’s mom’s lentil soup

Chop all the ingredients. It’s okay if you don’t have all of them.

  • 2 leeks
  • 3 small onions
  • 1 root celery (can be hard to find in the US but adds a nice brothy flavor)
  • 4 large carrots
  • 5 large potatoes
  • half or whole cabbage

Boil in the following:

  • Boil brown lentils for 25 minutes in 3 liters of water without any salt or spices (lentils soften faster without salt and spices).
  • Then, add vegetables and other ingredients. Cook for another 20-25 minutes.
  • Now you can add seasoning.

Seasoning can be things like:

  • Bullion cubes
  • Salt
  • Ground black pepper
